Almond Meal Vegan Banana Pancakes

Start your day right with these fluffy yet moist vegan almond meal banana pancakes. I find them best served with fresh strawberries and a drizzle of maple syrup.

  • 250 g almond meal
  • 1 cup soy milk
  • 1 banana, mashed
  • 1 tablespoon olive oil
  • 1 teaspoon vanilla bean paste
  • maple syrup and fresh fruit, for serving


  1. In a medium bowl mix all the ingredients together until well combined and slightly thick. Drop about 2 tablespoons of the batter onto the pan over medium heat. When bubbles pop, flip the pancake over. Cook for another couple of minutes. Repeat with the remaining batter.
  2. Serve pancakes warm with maple syrup and strawberries. Enjoy right away!
