Apple Cinnamon Oat Muffins

These moist and delicious healthy apple muffins with cinnamon and oats will be just great for a quick snack, breakfast or even dessert.

Ingredients

  • 1 1/2 cups wholemeal flour
  • 1 teaspoon baking powder
  • 1 tablespoon cinnamon
  • 1 teaspoon ground ginger
  • 1/2 cup rolled oats
  • 1/3 cup melted coconut oil
  • 1/3 cup maple syrup
  • 1/3 cup soy milk
  • 3 small apples, grated
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon baking soda
  • 1/2 cup granola or rolled oats

Method

  1. Preheat oven to 180°C and grease a 12-small or 6 large muffin baking tin. In a small bowl combine flour, baking soda, cinnamon, ginger and oats.
  2. In a separate bowl combine coconut oil, maple syrup and milk, give it a stir. Mix in grated apples and stir to combine. Add in apple cider vinegar and baking soda, mix until combined. If the batter is too stiff add more melted coconut oil.
  3. Spoon the batter into the prepared muffin cups filling them to half way. Sprinkle tops with granola/rolled oats. Bake for 25 minutes or until golden. Remove from the oven and let cool in the baking tin for 5 minutes. Let cool completely before serving. Enjoy!
