Avocado Raspberry Muffins

Bursting with fresh raspberries these vegan muffins make a great and healthy snack or dessert.

Ingredients

  • 1 tablespoon chia seeds
  • 3 tablespoons water
  • 1 1/2 cups all-purpose flour
  • 1/2 cup rolled oats
  • pinch of salt
  • 1 teaspoon baking powder
  • 1 ripe avocado
  • 1/2 cup raw brown sugar or to taste
  • 1 teaspoon baking soda
  • 1 teaspoon apple cider vinegar
  • 150 ml coconut milk
  • 1 1/2 cup fresh or frozen raspberries

Method

  1. Preheat oven to 180°C and line a muffin tin with 12 paper liners. Mix chia seeds and water together in a small bowl and let it sit for 10-15 minutes until the mixture becomes gel.
  2. In a medium bowl combine flour, oats, salt and baking powder together. In a separate bowl using an electric mixer beat avocado and sugar together until smooth. Add in baking soda and apple cider vinegar, mix until combined. Add in chia seed mixture and coconut milk, mix until combined. Slowly add in dry ingredients, mix until just combined. Fold in raspberries.
  3. Spoon batter into the prepared muffin cups and bake for 20-25 minutes until golden brown and toothpick comes out clean. Enjoy!
