Breakfast Porridge with Strawberry Puree and Peanut Butter
This warm, creamy and colourful vegan porridge bowl makes an ideal breakfast for busy mornings.

400 ml oat milk
250 ml water
100 g porridge oats
1 teaspoon vanilla bean paste
1/2 teaspoon cinnamon
1 cup fresh strawberries, sliced
2 tablespoon maple syrup
2 tablespoons smooth peanut butter
1 teaspoon cacao nibs
1 tablespoon almond flakes
1 teaspoon chia seeds
more fresh strawberries
In a sauce pan combine oat milk and water together, bring to a boil. Add in oats, vanilla and cinnamon. Simmer for 5 minutes, then take away from the heat, cover with a lid and let it sit for 10 minutes.
Meanwhile place strawberries and maple syrup into a blender and pulse until smooth.
Divide porridge between two serving bowls, pour the strawberry puree over, add peanut butter and the toppings. Enjoy right away.
