Breakfast Thin Crepes with Berries and Chocolate

Thin delicious vegan and gluten free crepes is just what you need to start your day.

Ingredients

  • 400 ml coconut milk
  • pinch of salt
  • 1 tablespoon raw brown sugar
  • 1 teaspoon baking soda
  • 3 tablespoons flax seed meal
  • 100 grams rice flour
  • 80 ml water

Method

  1. In a medium bowl combine coconut milk, salt, sugar, baking soda and flax seed meal. Leave the mixture for 10 minutes to set. Add flour and water, mix until well combined and smooth. Let the mixture stand for 15 minutes.
  2. Spray a non-stick skillet with oil and set over medium heat. Pour in about 1/4 cup of batter, tilting the pan so the batter makes a circle and coats the bottom. Cook for about 1 minute. Gently guide the spatula under the crepe and flip. Cook for an additional 30 seconds - 1 minute until completely cooked through and slightly golden. Serve warm with fresh berries, melted chocolate or any toppings of your choice.
