1 tablespoon chia seeds
3 tablespoons water
1 large ripe banana
1 teaspoon baking soda
1 tablespoon lemon juice
1/2 teaspoon vanilla bean paste
125 ml oat milk
1/2 cup rolled oats old fashioned
2 tablespoons raw cocoa powder
fresh berries, melted chocolate etc, for serving
Mix the chia seeds and water together in a small bowl and let it sit for 10 - 15 minutes until the mixture becomes gel.
In a bowl mash banana, add in chia seed mixture, baking soda, lemon juice, vanilla bean paste and milk, stir to combine. Mix in oats and cocoa powder, stir to combine. Allow batter to stand for 10 minutes until thickened slightly.
Pour about 2 tablespoons of batter per pancake onto preheated lightly greased pan. Cook 1 to 2 minutes on each side or until golden brown. Serve with fresh berries, melted chocolate or any desired toppings. Enjoy!
