Chocolate Pancake Cereal

Take your regular pancake cereal to the next level by adding some chocolate. Super easy to make and makes a wonderful breakfast or brunch.

I have two recipes below using plant-based milk and using buttermilk and eggs.

Ingredients

    Plant Based Version
  • 1 cup almond milk
  • 1 cup all-purpose flour
  • 1 tablespoon cacao powder
  • 1 teaspoon baking soda
  • tablespoon apple cider vinegar
  • olive oil, for frying
  • Buttermilk Version
  • 1 cup butter milk or probiotic drink
  • 1 egg
  • 1 cup all-purpose flour
  • 1 tablespoon cacao powder
  • 1 teaspoon baking soda
  • 1 tablespoon apple cider vinegar

Method

  1. Mix all the ingredients in a mixing bowl until smooth and no lumps remain. Pour the batter into a squeeze bottle or use a teaspoon.
  2. Heat a non-stick frying pan over medium heat and brush with oil. Squeeze out mini pancakes. When bubbles appear flip them and fry on the other side until golden brown. Repeat with the remaining batter. Serve pancake cereal warm with milk and butter or any toppings of your choice.
