Cinnamon Spelt Mini Pancakes

Ultra light breakfast pancakes made with spelt flour. Spelt flour is a great alternative to white flour, it`s high in fibre and low in calories which will help you to manage your weight. Spelt flour can also improve your digestion and reduces threat of diabetes.

Ingredients

  • 1 tablespoon ground flax seed
  • 3 tablespoons water
  • 1 cup milk of your choice (I used soy milk)
  • 2 1/2 cups spelt flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon cinnamon
  • 1/2 teaspoon mixed spice

Method

  1. Mix ground flax seed with 3 tablespoons of water. Let the mixture sit for 10 minutes until it becomes gel. In a mixing bowl add milk, flax seed mixture, stir to combine. Add in the rest of the Ingredients and mix until just combined. Let the batter sit for 5 minutes.
  2. Drop about 2 tablespoons of the batter onto the pan over medium heat. When bubbles pop, flip the pancake over. Cook for another couple of minutes. Repeat with the remaining batter. Serve warm with your favourite toppings and enjoy!
