Crispy Sweet Potato Breakfast Fritters

When you feel like something different for brekky give this recipe a go. These fritters are like hash browns, you can fry them or pop them in the oven instead.

  • 2 tablespoons flax-seed meal
  • 6 tablespoons water
  • 1 large sweet potato, peeled and grated
  • 1 small bunch of parsley, finely chopped
  • 1 small bunch of chives, finely chopped
  • 1 green pepper, diced
  • 2 tablespoons of flour of your choice (I used chickpea flour)
  • 1 teaspoon ground cumin
  • 1 teaspoon coriander
  • salt and pepper, to taste


  1. Mix ground flax seed meal with water in a small bowl. Let the mixture sit for 10 minutes until it becomes gel. Add all the ingredients into a large mixing bowl, add in flax-seed mixture. Mix until well combined.
  2. Form fritters with your hands and fry for 3-5 minutes on both sides over low heat until golden brown. Serve immediately and enjoy!
