Easy 3-Ingredient Vegan Gluten-Free Pancake Cereal

This vegan and gluten-free pancake cereal is a perfect weekend breakfast idea. Using only 3 ingredients these pancake cereal are super easy to make and they taste delicious. I served mine with raspberries, peanut butter and dairy-free chocolate.

  • 1 ripe mashed banana
  • 60 ml mineral water
  • 50 g rice or corn flour


  1. In a mixing bowl combine all the ingredients until smooth. Let the mixture sit for 7 minutes. Pour the batter into a squeeze bottle or use a teaspoon.
  2. Heat a non-stick frying pan over medium heat and brush with oil. Squeeze out mini pancakes. When bubbles appear flip them and fry on the other side until golden brown. Repeat with the remaining batter. Serve pancake cereal warm with any toppings of your choice.
