Easy Shakshuka Tofu Scramble

Ultimate comfort food meal that will be ready in no time. Try this vegan version of shakshuka with scrambled tofu in a delicious spicy tomato sauce.

You can also try this recipe with poached eggs instead of tofu.

Ingredients

  • 1 tablespoon olive oil
  • 1 small white onion, finely chopped
  • 1 garlic clove, minced
  • 1 large red pepper, diced
  • 3 tomatoes, diced
  • 1 can organic diced tomatoes
  • 1 cup fresh basil leaves
  • 1 teaspoon cumin
  • 300 g firm tofu, grated
  • 1 teaspoon turmeric
  • 1 tablespoon nutritional yeast
  • salt and pepper, to taste
  • fresh coriander, finely chopped, for serving
  • sesame seeds, for serving

Method

  1. In a large pan heat olive oil, and add onions and garlic. Cook for 5 minutes or until onions are golden brown. Add in red peppers, all the tomatoes, basil, cumin and season to taste. Cover the pan and let it cook for 7 minutes on low heat.
  2. In a small bowl toss grated tofu with turmeric and nutritional yeast until well combined. Use your large spoon to make small wells in the sauce and place the tofu into each well. Cover the pan and cook for another 5 minutes. Serve warm garnished with fresh cilantro and sesame seeds. Enjoy!
