Fluffy Greek Yogurt Blueberry Pancakes

Extra fluffy breakfast pancakes made with Greek yogurt and fresh blueberries will brighten up your morning and fill you up for the whole day ahead.

  • 350 g Greek yogurt
  • 2 eggs, lightly beaten
  • 1 teaspoon vanilla bean paste
  • 1 tablespoon raw brown sugar (optional)
  • 1 cup all-purpose flour, sifted
  • 1 teaspoon baking soda
  • 1 tablespoon apple cider vinegar
  • 1/2 cup fresh blueberries + more for serving
  • honey or maple syrup, for serving


  1. In a mixing bowl add yogurt, eggs, vanilla and sugar, mix until combined. Mix in sifted flour, then add baking soda and vinegar, mix until well combined and no lumps remain. Fold in blueberries and mix until just combined. Let the mixture sit for 5 minutes.
  2. Drop about 2 tablespoons of the batter onto the pan over medium heat. When bubbles pop, flip the pancake over. Cook for another couple of minutes. Repeat with the remaining batter.
  3. Serve pancakes warm with fresh blueberries and honey or maple syrup. Enjoy right away!
