Fluffy Ricotta Pancakes with Fresh Fruit and Berries

  • 2 cups firm ricotta
  • 1 cup milk
  • 2 eggs
  • 1 teaspoon vanilla bean paste
  • 1 teaspoon baking soda
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon raw brown sugar
  • 1 1/2 cups all-purpose flour
  • oil for frying


  1. In a medium bowl, using hand electric mixer beat ricotta and milk together until smooth. Beat in eggs, vanilla, baking soda, vinegar and sugar. Sift in flour and mix until combined and no lumps remain.
  2. Drop about 2 tablespoons of the batter onto the oiled pan over medium heat. When bubbles pop, flip the pancake over. Cook for another couple of minutes. Repeat with the remaining batter. Serve warm with fresh fruit and berries. Enjoy!
