Cook Time: 20 mins
Yields: 4

  • 1 ripe banana
  • 350 ml soy milk
  • 1 egg (use chia seed egg substitute if vegan)
  • 1/3 cup rice flour
  • 1/3 cup coconut flour
  • 1 tablespoon corn starch
  • pinch of salt
  • olive oil, for frying

  1. In a mixing bowl mash banana add in egg/chia seeds and milk. Beat together using a hand electric mixer. Beat in both flours, corn starch and salt.
  2. Heat oil on a frying pan over medium-low heat. Pour a small amount of batter in the center of the skillet, then quickly tilt it to all sides until it covers as much of the bottom as possible. Keep tilting until it won't spread out anymore. Cook for about 1 minute until the bottom is brown, then flip over and cook for another 30 seconds. Repeat with the remaining batter.
  3. Serve crepes warm with melted dark chocolate and coconut flakes or any toppings of your choice. Enjoy!
