Melon Smoothie Breakfast Bowls

  • 1 small melon
  • 2 frozen bananas
  • 1 cup blueberries
  • 1 tablespoon desiccated coconut + extra
  • 1 tablespoon rice syrup
  • Toppings: seeds, coconut, nuts, fruit and berries


  1. Cut melon in a half lengthwise. Scoop out the flesh. In a blender add all the ingredients and process until creamy and smooth. Divide smoothie between two melon “bowls”, top with nuts, seeds, fruit and berries. Dig in and enjoy!
