In a large mixing bowl add all the ingredients. Use an immersion blender to process until the mixture is completely smooth.
Heat a non-stick skillet over medium heat. Pour one tablespoon of the batter into the pan. After a few minutes the bubbles will appear and the surface will be mat. Carefully lift up the edge to check if the bottom side is cooked. Flip over and bake for 1 more minute. Serve warm with fresh fruit and berries.
