Mini Choc Pancakes

  • 2 1/2 cups soy milk
  • 1 tablespoon raw brown sugar
  • 2 tablespoons vegetable oil
  • 1 1/3 cups self-rising flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 tablespoons raw cocoa


  1. In a large mixing bowl add all the ingredients. Use an immersion blender to process until the mixture is completely smooth.
  2. Heat a non-stick skillet over medium heat. Pour one tablespoon of the batter into the pan. After a few minutes the bubbles will appear and the surface will be mat. Carefully lift up the edge to check if the bottom side is cooked. Flip over and bake for 1 more minute. Serve warm with fresh fruit and berries.
