Russian Crepes made with Vanilla Protein Powder

These crepes are perfect for just about any occasion. Two recipes for the classic Russian crepes and plant-based crepes version. Both made with vanilla protein powder, deliciously thin and easy to follow recipes.

Ingredients

    Russian Crepes
  • 1 cup full cream milk
  • 2 eggs
  • pinch of salt
  • 1 cup all-purpose flour
  • 1 tablespoon vanilla protein powder
  • Plant-Based Russian Crepes
  • 2 tablespoons ground flaxseed meal
  • 6 tablespoons of water
  • 2 cups almond milk
  • 1 cup all-purpose flour
  • pinch of salt
  • 1 tablespoon vanilla protein powder
  • olive oil, for frying
  • smooth peanut butter, for serving
  • raspberry jam, for serving
  • toppings of your choice

Method

  1. To make the classic Russian crepes in a mixing bowl using a hand electric mixer beat milk and eggs together. Add in salt and half of cup of the flour, beat until no lumps remain. Add in the rest of the flour and protein powder, beat until the batter is runny and smooth.
  2. Heat oil in a frying pan over medium-low heat. Pour a small amount of batter in the center of the skillet, then quickly tilt it to all sides until it covers as much of the bottom as possible. Keep tilting until it won't spread out anymore. Cook for about 1 minute until the bottom is brown, then flip over and cook for another 30 seconds. Repeat with the remaining batter. The crepes should come out very thin.
  3. To make the plant-based crepes combine ground flaxseed meal with water. Mix well together and let sit for 15 minutes to set up and thicken.
  4. Using a hand electric mixer beat milk and flaxseed mixture together. Add in salt, flour and protein powder, beat until the batter is smooth and no lumps remain.
  5. Pour a small amount of batter in the center of the skillet, then quickly tilt it to all sides until it covers as much of the bottom as possible. Keep tilting until it won't spread out anymore. Cook for about 1 minute until the bottom is brown, then flip over and cook for another 30 seconds. Repeat with the remaining batter.
  6. Serve crepes warm with peanut butter, raspberry jam and toppings of your choice. Enjoy immediately!
