Sugar Free Muesli Breakfast Biscuits

These easy gluten-free biscuits will be a life saver when you don`t have time to make breakfast. Made with dates, oats and dry cranberries, refined sugar free and naturally sweet.

Ingredients

  • 100 g dates
  • 1/4 cup hot water
  • 3 tablespoons melted coconut oil
  • 3 tablespoons honey/maple syrup
  • 1 cup rolled oats
  • 1/4 cup shredded coconut
  • 1/3 cup almond flakes
  • 1/2 cup dried cranberries
  • 1 cup almond meal
  • 1 teaspoon ground ginger
  • 1 tablespoon cinnamon

Method

  1. Add dates and hot water into a blender and pulse until you have a sticky smooth paste. In a mixing bowl mix together date paste, honey/maple syrup and coconut oil. Add in the rest of the ingredients and mix until well combined.
  2. Preheat oven to 180°C and line a baking tray with parchment paper. Roll tablespoon sized balls of the dough and place them on the prepared baking tray, slightly flatten them with your palm. Bake for 20 minutes. Take out from the oven and let cool on a wire rack for 10 minutes. Enjoy!
