Sweet Potato Hash Brown Breakfast Burritos

This breakfast burrito recipe is loaded with crispy sweet potato hash browns, mashed avocado and spinach. So tasty and ridiculously filling.

Ingredients

  • 1 large sweet potato, peeled and grated
  • 1 tablespoon olive oil
  • 1/2 cup chopped fresh parsley or coriander
  • 2 avocados, peeled and deseeded
  • 1 large tomato, diced
  • 1/2 red onion, finely chopped (optional)
  • salt and pepper, to taste
  • 6 corn tortillas
  • 1 cup baby spinach

Method

  1. Heat oil in a frying pan over medium heat. Add grated sweet potatoes and parsley, season to taste. Cook for about 15 minutes, tossing well as you go. In a bowl combine mashed avocado, tomatoes and onions together, season to taste.
  2. Heat tortillas until they are soft and flexible. Place baby spinach, 1 tablespoon of sweet potato hash browns and 1 teaspoon mashed avocado mixture in the middle of tortilla. Fold the tortilla over the filling and roll up. Repeat with remaining tortillas and ingredients. You can reheat your burritos if desired, then serve immediately and enjoy!
