Sweet Tofu and Blueberry Cakes

Tofu is not only one of the “healthiest foods” but also versatile ingredient for cooking sweet or savory dishes. Enjoy these vegan sweet tofu cakes with blueberries for breakfast or brunch.

Yields: 2-4


  • 500 grams firm tofu, with the excess water squeezed out with a paper towel
  • 1/4 cup soy milk
  • 1-2 tablespoons raw brown sugar
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon baking soda
  • 4-5 tablespoons all-purpose flour or gluten-free flour
  • 1 cup fresh or frozen blueberries
  • olive oil for frying


  1. Crumble tofu with your hands into a large bowl. Add in soy milk, sugar, salt and baking soda, mix well. Add in flour and blueberries. Mix until just combined.
  2. Form fritters with your hands, coating in additional flour, if needed. Heat oil in a frying pan over medium heat. Cook for a few minutes on each side until golden brown. Serve warm and enjoy!
