Tofu Scramble Breakfast Toastie

Simple tofu scramble ready in 5 minutes is a perfect vegan alternative to scrambled eggs.

Ingredients

  • 250 grams firm tofu, drained
  • 1 tablespoon olive oil
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1 teaspoon mild paprika
  • 1/2 teaspoon ground turmeric
  • sea salt, to taste
  • 4 slices of rye bread
  • 1 avocado, mashed
  • fresh strawberries, sliced
  • baby spinach leaves

Method

  1. Make tofu scramble by mashing the tofu into chunks. In a frying pan heat olive oil over medium heat. Add tofu and spices, mix to combine. Cook for about 5 minutes or until the tofu is golden brown.
  2. Assemble the sandwich. Toast the bread slices. Spread mashed avocado on each slice, top with tofu scramble, sliced strawberries and baby spinach. Serve immediately and enjoy!
