Vanilla Yogurt Breakfast Pancakes

Super fluffy breakfast pancakes made with vanilla yogurt and buttermilk. Best served with raspberries and warm maple syrup.

  • 1 cup vanilla yogurt
  • 1 cup buttermilk
  • 1 egg
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • fresh fruit and berries, for serving


  1. In a mixing bowl whisk together yogurt, buttermilk and egg. Sift in flour with baking powder and baking soda. Mix until combined and lumps remain.
  2. Drop about 2 tablespoons of the batter onto the pan over medium heat. When bubbles pop, flip the pancake over. Cook for another couple of minutes. Repeat with the remaining batter.
  3. Serve pancakes warm with fresh blueberries and honey or maple syrup. Enjoy right away!
