Vegan Date Coconut Pancakes with Peanut Butter Caramel

This super fluffy vegan pancakes made from creamy coconut milk and dates. Super easy to make and they are sweet enough you don`t need to add any sugar.

  • 4-5 Medjool dates, pitted
  • 1/2 cup water
  • 1 tablespoon olive oil
  • 1 cup coconut milk
  • 1 teaspoon vanilla bean paste
  • 1 teaspoon apple cider vinegar
  • 2 cups organic whole wheat all purpose flour
  • 1 teaspoon baking soda
  • Toppings:
  • peanut butter caramel
  • additional dates
  • coconut flakes
  • cacao nibs


  1. Place dates and water into a blender and pulse until a smooth paste forms. In a mixing bowl using a hand electric mixer beat together date paste, oil, milk, vanilla and apple cider vinegar. Add in flour and baking soda, mix until combined and no lumps remain.
  2. Drop about 2 tablespoons of the batter onto the pan over medium heat. When bubbles pop, flip the pancake over. Cook for another couple of minutes. Repeat with the remaining batter. Serve warm with peanut butter caramel, dates, coconut flakes and cacao nibs. Enjoy immediately!
