Wholewheat Peanut Butter Pancakes

Save this simple breakfast recipe. Peanut butter pancakes, served with maple syrup, fresh raspberries and homemade granola.

  • 2 cups unsweetened soy milk
  • 2 cups wholemeal flour
  • 1/4 cup smooth peanut butter
  • 1 tablespoon olive oil
  • 1 teaspoon baking soda
  • 1 teaspoon apple cider vinegar
  • pinch of salt
  • maple syrup, for serving
  • fresh berries of your choice, for serving
  • homemade granola, for serving


  1. In a mixing bowl, combine all the ingredients together, mix until well combined and slightly thick. Let the mixture rest for 10 minutes.
  2. Drop about 2 tablespoons of the batter onto the pan over medium heat. When bubbles pop, flip the pancake over. Cook for another couple of minutes. Repeat with the remaining batter. Serve warm with maple syrup, berries and homemade granola. Enjoy immediately!
