Asian Style Kale Salad with Baked Sweet Potato Hash Browns

Tasty and quickly prepared lunch bowl will fill you up with fresh vegetables and crispy hash browns.

  • For the Salad:
  • 2 cups chopped fresh kale, stems removed
  • 1 cup chopped red cabbage
  • 2 medium carrots, grated
  • 1 capsicum. deseeded and chopped
  • 1 small bunch fresh coriander, chopped
  • 1 tablespoon sesame seeds, for serving
  • 1/2 cup raw almonds, for serving
  • For the Dressing:
  • 1/2 cup lemon juice
  • 3 tablespoons soy sauce or Tamari
  • 1 tablespoon maple syrup
  • 1 tablespoon rice vinegar
  • 2 tablespoons sesame oil
  • baked sweet potato hash browns


  1. In a large mixing bowl combine all the salad ingredients. Make the dressing by mixing all the ingredients together. Pour the dressing over the salad and toss to combine.
  2. Serve salad garnished with fresh coriander, sesame seeds and raw almonds. Enjoy!
