Delicious broccoli and artichoke fritters with tahini dressing. So easy to make and just perfect for lunch or dinner.

Ingredients
2 tablespoons chia seeds
6 tablespoons water
1 medium broccoli head, cut into florets
150 grams marinated artichoke hearts, you can buy them from deli section at the supermarket
small bunch fresh parsley, finally chopped
3 tablespoons chickpea flour
1 teaspoon oregano
salt and pepper, to taste
Method
Mix chia seeds and water together in a small bowl and let it sit for 10 - 15 minutes until the mixture becomes gel.
Ada chia seed mixture and all the rest of the ingredients into a food processor and pulse until well combined. Heat olive oil in a frying pan over low heat. Form fritters with your hands and fry for about 3 minutes on both sides until golden brown. Serve immediately and enjoy!

I served my fritters with fresh baby spinach leaves and tahini dressing.
