Comforting tomato soup is hearty, nourishing and packed with healthy veggies.

1 tablespoon olive oil
1 small white onion, finely chopped
1-2 garlic cloves, minced
2 small carrots, grated
1,5 lt water or vegetable stock
1/2 cup chickpeas
1/2 cup barley
1 small head broccoli, cut into florets
1 cup tomato passata or to taste
3 bay lives
salt and pepper, to taste
In a large pot heat olive oil over medium heat, add onions and garlic and cook for about 5 minutes or until golden brown. Add carrots and cook for another 5 minutes. Add water/stock and chickpeas, bring to a boil. Simmer for 10 minutes over medium heat.
Add barley and cook for another 15 minutes. Add broccoli, tomato passata, bay leaves and season to taste. Cook for another 10 to 15 minutes or until chickpeas and barley are tender. Serve warm and enjoy immediately.
Add more tomato passata if you want your soup to be thicker.
