Corn and Quinoa Salad with Mushrooms and Creamy Avocado Dressing

Ingredients

  • For the Salad:
  • 1/2 cup quinoa
  • 1 cup sweet corn kernels
  • 2 medium cucumbers, chopped
  • 1 cup cooked sliced mushrooms
  • 2 carrots, grated
  • 1 avocado, sliced (optional)
  • fresh coriander, chopped
  • For the Avocado Dressing:
  • 1 avocado
  • 1/2 cup oat milk
  • 1 green chili pepper
  • 1 teaspoon lemon juice
  • 1 teaspoon mustard powder
  • 1 garlic clove, crashed
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasonings
  • coriander, to taste
  • salt and pepper, to taste

Method

  1. Cook quinoa according to the package directions and let cool.
  2. In a large salad bowl combine all the salad ingredients.
  3. Make the dressing. Place all the ingredients into a blender and pulse until smooth and creamy. Place salad in the serving bowls, spoon on the avocado dressing and serve!
