Creamy Lentil and Carrot Soup

Easy 3 ingredient creamy lentil soup. The soup doesn’t include any cream at all yet tastes absolutely delicious and high in fibre and protein.

  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 4 carrots, grated
  • 1 cup red lentils
  • 1.5 L water or vegetable stock
  • 1 teaspoon ground cumin
  • 1 teaspoon coriander
  • salt and pepper, to taste


  1. Heat oil in a large pot over medium heat and add onions. Cook for 5 minutes or until golden brown. Add carrots and cook for another 5 minutes. Add lentils, water and seasonings. Bring to a boil and simmer for 30 minutes or until lentils are tender.
  2. Allow the soup to cool slightly. Transfer to a blender and puree. Serve warm and enjoy!
