Easy Sweet Potato and Zucchini Fritters

Just two main ingredients and you have your dinner ready in under 20 minutes. Quick and easy recipe for tasty vegan sweet potato and zucchini fritters.

  • 2 tablespoons flax-seed meal
  • 6 tablespoons water
  • 1 sweet potato, peeled and grated
  • 1 medium zucchini, grated
  • 1 cup chopped parsley
  • 2 tablespoons all-purpose flour
  • 1 teaspoon rosemary
  • 1 teaspoon thyme
  • 1 teaspoon turmeric
  • salt and pepper, to taste
  • olive oil, for frying
  • vegan sour cream, for serving


  1. In a small bowl whisk flax-seed meal with water. Let it sit for 5 minutes to thicken. In a medium bowl combine flax-seed meal mixture, potatoes, zucchini, parsley, flour, spices and season to taste.
  2. Form fritters with your hands and fry for about 3 minutes on both sides until golden brown. Serve immediately with vegan sour cream and enjoy!
