Easy Zucchini Fritters

Cook Time: 25 mins
Yields: 2-4


  • 2 zucchinis, grated
  • small bunch fresh cilantro, finely chopped
  • 3 tablespoons all-purpose flour
  • 2 garlic clove, minced
  • 1 egg (if vegan use flax-seed egg substitute)
  • salt and pepper, to taste
  • vegetable oil for frying


  1. In a large bowl mix all the Ingredients. Heat a non-stick frying pan over medium-high heat. Add 1/2 cup portions of the zucchini mixture and press to flatten. Cook for 5 minutes until base is golden. Flip over and cook for another 3 to 4 minutes. Repeat with remaining mixture.
  2. Serve with fresh green salad leaves and more veggies. Enjoy.
