Gluten Free Vegan Cauliflower & Broccoli Fritters

Ingredients

  • 1 small cauliflower, cut into florets and cooked
  • 1 small broccoli, cut into florets and cooked
  • 1 medium carrot, grated
  • 1/2 cup dairy-free mozzarella cheese
  • 1/2 cup bread crumbs
  • 1/4 cup almond meal
  • 1 teaspoon sweet paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • salt and pepper to taste

Method

  1. Add all the ingredients into a blender or food processor and pulse until combined and a thick paste formed.
  2. Form fritters with your hands and cook on both sides until golden brown. Serve warm and enjoy.

Note

These fritters will also make a perfect burger patty and kids just love them.
