Loaded Tofu Scramble Bagel

Another brunch or lunch recipe idea. Crispy toasted whole grain bagels with vegan loaded tofu scramble. Sunday brunch doesn’t get better than this.

Here is my secret how to make the perfect tofu scramble. Instead of using a knife and chopping the tofu, simply grate it, this way you will have perfect bite-sized pieces.

Cook Time: 10 mins
Yields: 4


  • 1 tablespoon olive oil
  • 1 small white onion, finely chopped
  • 1 capsicum, chopped
  • 350 g firm tofu, grated
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1 teaspoon mild paprika
  • 1/2 teaspoon ground turmeric
  • sea salt, to taste
  • To Serve:
  • 4 whole grain bagels
  • 1 large mashed avocado
  • 1 large tomato, sliced
  • 1 cup baby spinach
  • seeds and nuts of your choice


  1. Heat oil in a frying pan over medium heat. Add onions and cook for 5 minutes or until golden brown. Add chopped capsicum, tofu, spices and season to taste. Cook for another 5 minutes or until the tofu is golden brown.
  2. Serve the tofu scramble warm, garnished with your favourite nuts and seeds, toasted bagels, mashed avocado, tomatoes and baby spinach. Enjoy right away!
