250 g firm tofu, cubed
1 pack rice noodles
1 bunch bok choy
4-5 green onions, finely chopped, for serving
2 tablespoons ground peanuts, for serving
For the Marinade:
2 tablespoons soy sauce
1 tablespoon balsamic vinegar
1 tablespoon sesame oil
1 teaspoon garlic powder
1 teaspoon onion powder
Make the marinade. In a medium bowl combine all the marinade ingredients together. Add in tofu and toss until evenly coated. Leave to marinade for 30 minutes.
Meanwhile cook rice noodles according to the package directions. Bring a large pot with water to a boil. Add bok choy and cook for a couple of minutes, then remove and set aside.
Heat oil in a frying pan over medium heat. Add in marinated tofu along with the remaining marinade liquid and bok choy. Cook for 3-5 minutes until tofu is golden brown and bok choy is soft. Serve warm, with rice noodles, garnished with spring onions and ground peanuts. Enjoy right away!
