Quick lunch, dinner or snack recipe. Savoury fritters with mashed chickpea and brown rice. Crispy and taste so good.

1 tablespoon olive oil
1 small white onion, finely chopped
1 can no salt added chickpeas
1 cup cooked brown rice
1 egg or flax-seed egg replacement, if vegan
salt and pepper, to taste
olive oil, for frying
fresh parsley, for serving
Heat oil in a frying pan and add onions. Cook for 5 minutes or until golden brown, then set aside. Mash chickpeas in a mixing bowl with fork. Add in onions, brown rice and egg/flax-seed egg. Season to taste and mix until the mixture is well combined and sticky.
Form fritters with your hands and fry for about 3 minutes on both sides until golden brown. Serve immediately with fresh parsley and enjoy!
