Heat oil in a frying pan over medium heat. Add onions and garlic and cook for 5 minutes. Add tomatoes and cook for another 5 minutes. Add tomato paste and seasonings, stir to combine and cook for another 10 minutes. Add mushrooms and cook for 10-15 minutes until mushrooms are tender.
Cook noodles according to the package directions. In a medium bowl combine cabbage, carrots and kale.
Divide the noodles between serving bowls, top with the tomato-mushroom mixture. Add cabbage and carrot mix and garnish with fresh parsley/cilantro. Enjoy.
