Noodle and Mushrooms Lunch Bowl

  • 1 small onion, finely chopped
  • 1 garlic clove, minced
  • 3 tomatoes, chopped
  • 1 tablespoon tomato paste
  • 1/2 teaspoon dry basil
  • 1/2 teaspoon oregano
  • fresh parsley, chopped
  • salt and pepper, to taste
  • 3 cups sliced mushrooms
  • 1 pack noodles of your choice
  • 1/4 cup purple cabbage, diced
  • 1 small carrot, grated
  • 1 cup kale
  • more fresh parsley or cilantro for garnish


  1. Heat oil in a frying pan over medium heat. Add onions and garlic and cook for 5 minutes. Add tomatoes and cook for another 5 minutes. Add tomato paste and seasonings, stir to combine and cook for another 10 minutes. Add mushrooms and cook for 10-15 minutes until mushrooms are tender.
  2. Cook noodles according to the package directions. In a medium bowl combine cabbage, carrots and kale.
  3. Divide the noodles between serving bowls, top with the tomato-mushroom mixture. Add cabbage and carrot mix and garnish with fresh parsley/cilantro. Enjoy.
