Purple Cauliflower Veggie Fritters

  • 1/4 white cauliflower, trimmed, cut into florets
  • 1/4 purple cauliflower, trimmed, cut into florets
  • 1 carrot, grated
  • 1 garlic clove, minced
  • 1 egg (if vegan use flax-seed egg substitute)
  • 3 tablespoons all-purpose flour
  • 1 small bunch fresh cilantro, chopped
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon cayenne pepper


  1. Add all the ingredients into a blender or food processor and pulse until combined and a thick paste formed.
  2. Heat oil in a frying pan over medium heat. Form fritters with your hands and cook on both sides until golden brown. Serve warm and enjoy.
