Quinoa Stuffed Pepper Boats

  • 3 green peppers, cut in halves, deseeded
  • 1/2 cup quinoa
  • 1 cup chopped mushrooms
  • 1 carrot, grated
  • mall bunch fresh parsley


  1. Preheat oven to 180°C and line baking tray with parchment paper. Arrange peppers on the prepared tray and bake for 20 minutes.
  2. Cook quinoa according to the package directions. Heat oil in a frying pan over medium heat. Add mushrooms and cook for 10 minutes. Add carrots and parsley and cook for 5 minutes.
  3. Take the peppers out of the oven. Don’t turn the heat off. In a large bowl mix together cooked quinoa and mushroom mixture. Spoon quinoa mixture into each pepper and place in a baking dish. Cover with foil and bake for about 20 minutes. Enjoy!
