Roasted Cauliflower with Creamy Avocado Dressing

  • 1 head cauliflower, cut into florets
  • 2 tablespoons olive oil
  • 1 teaspoon dry basil
  • 1 teaspoon oregano
  • 1 avocado
  • 1 teaspoon lemon juice
  • 1 teaspoon mustard powder
  • 1 garlic clove, crashed
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasonings
  • 1/2 cup oat milk
  • 1/2 cup parsley
  • salt and pepper, to taste
  • more fresh parsley, for serving


  1. Preheat oven to 180°C and line baking tray with parchment paper. Arrange the cauliflower florets in the prepared tray, drizzle with oil and season with spices. Bake for 15-20 minutes or until golden brown.
  2. Make the avocado dressing. Place avocado, lemon juice, mustard powder, garlic, onion powder, Italian seasonings, milk, parsley, salt and pepper into a blender. Process until smooth and creamy. You can add more milk if needed.
  3. Serve roasted cauliflower warm. Drizzle with avocado dressing and garnish with parsley. Enjoy!
