In a large pot bring 1,5 liters of water to a boil and add beans and potatoes.
Meanwhile, heat oil in a frying pan, add garlic and cook for 30 seconds. Add onions and cook for about 5 minutes or until golden brown. Add carrots and tomato paste. Cook for 10 minutes. Add spices and cook for additional 2-3 minutes.
Add the tomato mixture to the pot. Add bay leaves and simmer on a low heat for 15-20 minutes, until beans are soft. Serve warm, garnished with fresh parsley. Enjoy.
