Spicy Bean Soup

  • 1/2 cup red kidney beans, soaked for 8 hours
  • 1/2 cup white beans, soaked for 8 hours
  • 2 potatoes, cubed
  • 2 garlic cloves, minced
  • 1 small red onion, finely chopped
  • 1 medium carrot, grated
  • 2 tablespoons tomato paste
  • 2 bay leaves
  • 1 teaspoon coriander
  • 1 teaspoon dry basil
  • salt and pepper, to taste
  • fresh parsley, shopped, for serving


  1. In a large pot bring 1,5 liters of water to a boil and add beans and potatoes.
  2. Meanwhile, heat oil in a frying pan, add garlic and cook for 30 seconds. Add onions and cook for about 5 minutes or until golden brown. Add carrots and tomato paste. Cook for 10 minutes. Add spices and cook for additional 2-3 minutes.
  3. Add the tomato mixture to the pot. Add bay leaves and simmer on a low heat for 15-20 minutes, until beans are soft. Serve warm, garnished with fresh parsley. Enjoy.
