1/2 cauliflower, cut into florets
1 tablespoon extra-virgin olive oil
1/4 teaspoon chili powder
1/4 teaspoon oregano
1/4 teaspoon paprika
1/4 teaspoon cumin
1/4 teaspoon garlic powder
salt and pepper, to taste
1/4 purple cabbage, thinly sliced
2 cups baby spinach
1 cup fresh parsley
12 corn tortillas
Preheat oven to 180°C and line a baking tray with parchment paper. Arrange cauliflower florets on the prepared baking tray, sprinkle with oil and spices, season to taste. Roast for 15-20 minutes or until golden brown.
Heat taco tortillas. Serve each taco with spinach, roasted cauliflower, cabbage , parsley. Top with crushed corn chips. Enjoy right away.
