Spinach Quinoa and Raspberry Salad with Pineapple Dressing

Ingredients

  • 2 cups baby spinach
  • 1 green apple, sliced
  • 1/2 cup raw almonds
  • 1/2 cup cooked quinoa
  • 1 cup fresh raspberries
  • For the Dressing:
  • 1/2 cup pineapple chunks
  • 1/2 cup soy milk
  • 1 tablespoon lemon juice

Method

  1. In a large salad bowl mix baby spinach, sliced apples, almonds, quinoa and raspberries.
  2. Make the dressing. Place pineapple chunks, soy milk and lemon juice into a blender and process until smooth. Pour the dressing over the salad, mix to combine, serve and enjoy.
