Tofu Stir Fry with Mushrooms and Spinach

This is a great recipe for a healthy weekday lunch. Simply delicious and nutritious tofu stir fry with mushrooms, spinach and garlic soy sauce.

  • 2 tablespoons soy sauce or Tamari
  • 2 tablespoons maple syrup
  • 1 teaspoon rice vinegar
  • 1 tablespoon minced garlic
  • 1 tablespoon dairy-free butter
  • 2 cups sliced mushrooms
  • 300 g firm tofu, cubed
  • 3-4 cups baby spinach
  • cooked noodles, for serving
  • sesame seeds, for garnishing
  • red chili, for garnishing


  1. In a small bowl combine soy sauce/Tamari, maple syrup, vinegar and garlic. Set aside.
  2. Melt butter in a large pan or wok over medium heat. Add mushrooms and cook for 10 minutes or until almost all the water has evaporated. Add tofu and cook for another 5 minutes, tossing occasionally until the tofu is golden brown. Add spinach and cook for a couple of more minutes. Add in the soy sauce mixture and cook for another 30 seconds. Turn the heat off and leave in the pan for another 5 minutes.
  3. Serve warm with noodles, garnished with sesame seeds and chili. Enjoy right away.
