Turmeric Roasted Cauliflower and Mushroom Tacos

Try a different twist for a taco night next time. Crispy turmeric roasted cauliflower in a soft taco with mushrooms, spinach, avocado and cheese combo. So delicious!

  • 1/4 cauliflower head, cut into florets
  • 1 tablespoon extra-virgin olive oil
  • 1 teaspoon turmeric
  • 1 teaspoon oregano
  • 2 cups sliced mushrooms
  • 6 taco shells or corn tortillas
  • 1 cup chopped baby spinach
  • 2 avocados, peeled and sliced
  • shredded cheese (use dairy-free if vegan)


  1. Preheat oven to 180°C and line a baking tray with parchment paper. In a mixing bowl add cauliflower florets, oil, turmeric and oregano. Toss well to combine. Arrange cauliflower florets and mushrooms on the prepared baking tray, give it a quick toss. Bake for 20 minutes until tender and golden brown.
  2. Arrange each taco with roasted cauliflower, mushrooms, spinach and avocado. Add cheese and heat up or grill if desired. Enjoy immediately.
