Vegan Broccoli and Corn Fritters

  • 2 tablespoons flax-seed meal
  • 6 tablespoons water
  • 2 small heads of broccoli, cut into florets
  • 1 cup corn kernels
  • 1 small bunch coriander, finely chopped
  • 1 avocado, mashed
  • salt and pepper, to taste


  1. In a small bowl whisk flax-seed meal with water. Let it sit for 5 minutes to thicken. Place flax-seed meal mixture with the rest of the ingredients into a food processor and pulse until a sticky paste forms.
  2. Form fritters with your hands and fry for about 3 minutes on both sides until golden brown. Serve immediately and enjoy!
