Vegan Spring Roll Salad with Peanut Dressing

Ingredients

  • 1/4 purple cabbage, thinly sliced
  • 1 cucumber, chopped
  • 1 yellow pepper, chopped
  • 1 medium carrot, chopped
  • 1 cup bean sprouts
  • small bunch fresh coriander, finely chopped
  • small bunch fresh mint, leaves only, finely chopped
  • For the Peanut Dressing:
  • 3 tablespoons smooth peanut butter
  • 3 tablespoons coconut milk
  • 1 teaspoon Tamari
  • 1/2 teaspoon fresh ginger
  • 1/2 teaspoon maple syrup or to taste
  • 1/2 teaspoon lemongrass powder
  • 1/2 teaspoon coriander powder
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon chili or to taste
  • salt, to taste

Method

  1. Combine all the salad ingredients in a large bowl.
  2. Make the dressing. Place all the ingredients into a blender and pulse until smooth, adding more milk if needed. Pour the dressing over salad, serve and enjoy immediately.
