Ingredients

  • 1/2 cup cooked quinoa
  • 1/2 cup cherry tomatoes, halved
  • 1 large sweet potato, roasted
  • 1/2 cup green beans
  • 3 tablespoons hummus
  • 1 cup spinach
  • 1/2 cup mung beans
  • fresh parsley, chopped
  • salt and pepper, to taste

Method

  1. Arrange all the ingredients in two wide bowls, serve immediately and enjoy.
