Veggie Bowl with Potato Fritters

  • 1 cup cooked mushed potato
  • 1 cup cooked, sliced mushrooms
  • 1/2 cup snow peas
  • 1 small carrot, grated
  • 1 small white onion, finely chopped
  • 2 tablespoons all-purpose flour
  • 1 garlic clove, minced
  • 1/2 teaspoon black pepper
  • 1 teaspoon coriander, ground
  • salt, to taste
  • 1/2 cup bread crumbs
  • olive oil, for frying


  1. Add all the fritter ingredients into a food processor and pulse until smooth. Form the mixture into small fritters. Heat oil in a frying pan over medium heat. Dunk each fritter into bread crumbs and fry on each side until golden brown. Serve with fresh veggies and enjoy immediately.
