White Beans in Tomato Sauce on Toast

Super easy recipe for a quick lunch or a snack. Soft white beans in tomato sauce served on toast with basil pesto and fresh coriander.

Yields: 4


  • 1 can organic no salt added beans
  • 2 cups chopped tomatoes and their juices
  • 1 tablespoon olive oil
  • 1 small white onion, finely chopped
  • 2 garlic cloves, minced
  • 1 teaspoon rosemary
  • salt and pepper, to taste
  • 4 slices of bread
  • 2 tablespoons basil pesto
  • fresh coriander leaves
  • sunflower seeds, for serving (optional)


  1. Place tomatoes in a food processor and pulse until coarsely chopped. Heat oil in a frying pan over medium heat. Add onions and cook for 3 minutes or until golden brown. Add in tomato mixture, garlic, rosemary, beans and season to taste. Bring the mixture to a boil and simmer for 10 minutes on low heat.
  2. Assemble the toasts with tomato bean mixture, basil pesto and fresh coriander leaves. Sprinkle over with sunflower seeds if desired. Enjoy right away.
