Zucchini and Feta Fritters with Creamy Tzaziki Sauce

These super delicious zucchini fritters with crumbly feta cheese will make a great lunch meal or a perfect light dinner. Served with creamy Tzaziki sauce and chives.

The original recipe contains eggs and dairy. I added the substitute ingredients for this recipe to make it plant-based.

Ingredients

    For the Fritters:
  • 2 medium zucchini, grated
  • 200 g feta, crumbled (use dairy-free feta or firm tofu, if vegan)
  • 1 small red onion, finely chopped
  • 1/2 cup mint leaves, chopped
  • 1/2 cup chopped chives
  • 1/3 cup chopped dill
  • 2 eggs or flax-seed eggs
  • 2 tablespoons whole-meal flour
  • salt and pepper, to taste
  • For Tzaziki Sauce:
  • 1 cup Greek yogurt
  • 1 medium cucumber, chopped
  • 1 garlic clove, minced
  • 1/2 cup chopped dill
  • 1/3 cup chopped chives
  • 5 mint leaves, chopped
  • 1 tablespoon lemon juice
  • salt and pepper, to taste

Method

  1. Squeeze as much liquid as possible out of the zucchini. In a mixing bowl combine all the ingredients. Form fritters with your hands and fry over low heat for about 5 minutes on both sides until golden brown and cooked through.
  2. Make Tzaziki sauce. In a mixing bowl combine all the ingredients and season to taste.
  3. Serve the fritters warm with Tzaziki sauce and enjoy!
